BACON-WRAPPED WATERMELON RIND 
Watermelon rind preserves
1/2 strip per watermelon rind chunk

Drain watermelon rind preserves. Wrap bacon around chunks and secure with round toothpicks. Place on rack in baking pan. Bake at 375 degrees until bacon is crisp, about 15 to 20 minutes. Serve hot.
