COCONUT LAYER CAKE (OLD-TIME) 
1/2 c. butter
1 1/4 c. sugar
8 egg whites
2 1/2 c. flour
1/4 tsp. salt
1 tsp. baking powder
1 tsp. vanilla

ICING:

2 c. milk
2 eggs
3 tbsp. sifted flour
1 c. sugar
2 tsp. vanilla
2 c. freshly grated coconut

Mix flour, salt and baking powder. Cream butter and sugar. Add vanilla then alternately, the flour and whipped egg whites. Beat hard. Bake in 3 layer cake pans. When cool put together with coconut filling.

Icing: Scald milk in double boiler; add sugar and flour. Cook 10 minutes. Add eggs and cook 4 minutes. Take off heat, add vanilla and coconut.
