TOMATOES PARMESAN WITH BROCCOLI 
2 pkgs. frozen chopped broccoli
2 tbsp. onion, chopped
2 tbsp. butter
1 c. sour cream
1 tsp. grated lemon rind
Salt & pepper
4 firm ripe tomatoes
Grated Parmesan cheese

Preheat oven to 400 degrees. Cook broccoli according to package directions. Drain well. Saute onion in butter until golden. Add onion, lemon rind, and sour cream to broccoli. Salt and pepper to taste if needed. Arrange in bottom of a buttered baking dish. Slice tomatoes in thick pieces. Salt and pepper them and sprinkle both sides with Parmesan cheese. Arrange these in 1 or 2 layers on top of the broccoli. Sprinkle top with more cheese. Bake about 20 minutes or until top is a little brown.
