MY EASY POTATO SOUP 
Potatoes
Onion
Salt
Pepper
Milk
Butter
Crackers

Peel and dice potatoes, dice onion then boil potatoes and onion until potatoes are fork tender.

Drain half of water and replace with milk. Add some butter, salt and pepper to taste. Cook until hot then its done. Top with crackers.

This is a great recipe, it is exactly how my Grandfather used to make it and when I saw and ate this It brought back so many memories of him and I playing cards, and eating this soup on a cold winter days. Kudos!!!!

Try taking out some of the cooked potatoes and mashing them and adding them back in the soup to thicken it. Also, try sauteeing some leeks in the butter in place of the onions and adding them to the soup when potatoes are done. Enjoy!

This is the way I make my soup, but mix some flour with water, salt and pepper and stir in after potatoes are done to thicken. Never tried crackers with it, sounds good as a lot of other reviews variations! Thanks for posting!

I use a similar preparation. Like most commenters, I add bacon, but fix it up first by carmelizing it in a separate pan first with sugar and adding the onions. I overcook the bacon slightly, and add it towards the end so it doesn't turn out soggy.
