CHICKEN AND RICE | |
4 boneless chicken breast 1 pkg. taco mix 1/2 c. salsa Cut chicken in small bite size pieces. Place in plastic bag and add cornstarch, enough to coat chicken, shake to cover. Brown in oil. Saute chopped onions and green peppers. Add to browned chicken, then add taco mix and water (enough to make salsa around chicken). Add about 1/2 cup salsa, cook about 20 minutes, stick to keep from sticking. Serve over hot rice. Can also be made with beef strips using flour instead of cornstarch to coat meat. |
