BROCCOLI SOUP 
1 bunch broccoli
1 tsp. salt
1 tsp. olive oil
1 qt. water (enough to cover)
1/2 c. raw pasta

Cut up broccoli. Pare stems. Wash and drain. Bring water to a boil and add salt. Add broccoli and cook until just tender. Remove broccoli with slotted spoon and set aside. Bring liquid to a boil and add pasta. Reduce heat and cook until tender. Add olive oil and serve immediately. This soup will consist of a hearty broccoli flavored broth and pasta. Use the broccoli as a side dish, served with sausage or otherwise. This is the economical way. If you prefer, return broccoli to soup for a heavier soup.

Broccoli: Place cooked broccoli in a bowl. Add a clove of garlic cut in half and sprinkle with about 1 teaspoon olive oil. Serve as a side dish.
