AUSTRALIAN RED CAKE 
1/2 c. shortening
1 oz. red food coloring
2 1/4 c. cake flour
2 tbsp. cocoa
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
2 eggs
1 1/2 c. sugar
1 tbsp. vinegar
1 c. buttermilk

Cream shortening, sugar and eggs. Make paste of food coloring and cocoa and add to mixture. Sift flour and salt and mix with buttermilk and vanilla. Add to other ingredients by hand. Stir in vinegar and soda. Do not beat. Bake in 2 greased and floured 8 or 9 inch pans for 20 to 30 minutes at 350 degrees.
