PEACH MELBA 
1/2 c. raspberries, fresh or frozen
1 tsp. honey
Dash of cinnamon
1/4 c. Ricotta cheese or 1/2 c. plain yogurt
1 (16 oz.) unsweetened peach halves, packed in juice OR
4 fresh peaches, pitted and cut in half

Blend raspberries until liquified. Blend in honey. Stir in cinnamon and set aside. Beat ricotta until fluffy. Fill centers of peach hales with ricotta. Spoon raspberry sauce over. Serves 4.
