FRESH SPINACH SALAD 
1 1/2 lbs. fresh spinach
1 clove garlic, sliced
3/4 c. salad oil
1/2 c. red wine vinegar
1/2 tsp. salt
3 hard boiled eggs, chopped
4 slices bacon, crisply fried and crumbled
Dash black pepper

Wash spinach, remove stems and tear leaves into bite size pieces. Dry. Chill 2 hours. Let garlic stand in oil 1 hour, then remove garlic. Just before serving, mix oil, vinegar, salt and pepper in a large salad bowl. Add spinach and toss with dressing. Sprinkle with eggs and bacon. Toss lightly.
