BASIC MEATBALLS 
1 lb. ground beef
1 egg
1 sm. onion, chopped fine (about 1/4 c.)
1/3 c. dry bread crumbs
1/4 c. milk
3/4 tsp. salt (opt.)
1/8 tsp. pepper
1 tsp. Worcestershire sauce

Mix all ingredients. Shape mixture by tablespoon into 1 1/2" balls. Heat 1 tablespoon salad oil in large skillet; cook meatballs over medium heat until brown, about 20 minutes. Drain off fat. Makes about 24 meatballs.

SAUCY MEATBALLS:

1 recipe for Basic Meatballs
1 (10 3/4 oz.) can cream of mushroom soup
1/3 c. milk
1/8 tsp. nutmeg
1/2 c. dairy sour cream
Snipped or dried parsley

Prepare Basic Meatballs. Combine cooked meatballs, soup, milk, and nutmeg in large skillet; heat to boiling, stirring occasionally. Reduce heat; cover and simmer 15 minutes. Stir in sour cream; cover and heat 2 to 3 minutes. Sprinkle with parsley. Makes 4 to 5 servings. Serve over rice or mashed potatoes.
