ITALIAN CREAM CAKE 
1 stick butter
1/2 c. shortening
2 c. sugar
5 egg yolks
2 c. plain flour
5 egg whites, stiffly beaten
1 tsp. baking soda
1 c. buttermilk
1 tsp. vanilla
1 sm. can coconut
1 c. chopped nuts

Cream shortening and butter. Add sugar and beat until smooth. Add egg yolks, beat well. Combine flour and soda, add to mix and alternate with buttermilk. Stir in vanilla. Add coconut and nuts. Fold in beaten egg whites. Pour in three 8-inch greased and flour baked pans. Bake at 350 degrees for 25 minutes. Cool.

ICING:

8 oz. cream cheese
1 tsp. vanilla
1 tsp. milk, if needed
1/2 stick butter
1 box XX sugar

Beat cream cheese, butter, add sugar, then vanilla. Sprinkle with coconut and nuts.
