PINEAPPLE CHEESECAKE BARS 
CRUMB MIXTURE:

1/2 c. butter
1 1/4 c. flour
1/3 c. sugar
1 tbsp. orange peel

FILLING:

8 oz. cream cheese
1/4 c. sugar
1 egg
1 tbsp. lemon juice
1/2 c. drained pineapple

Beat crumb mixture together. Reserve 1/2 cup. Press crumb mixture into 8" square baking dish. Bake at 350 degrees for 12 to 17 minutes.

Combine all filling ingredients except pineapple. Beat 1 to 2 minutes, stir in pineapple. Spread over hot crust, sprinkle with remaining crumb mixture. Return to oven 15 to 20 minutes. Cool and cut in squares.
