ZUCCHINI CAKES 
3 c. shredded zucchini, drained
1/2 c. shredded cheese
3 tbsp. parsley
1 lg. clove garlic, finely chopped or garlic salt
2 eggs
1 tsp. salt
Dash of pepper
1 c. Bisquick

Add all together. Stir in Bisquick last. Drop by tablespoons into frying pan in hot oil. Fry about 1 minute on each side. Drain. Can also substitute carrots instead of zucchini.
