BLACKBERRY-PECAN CAKE WITH FROSTING | |
1 box white cake mix 1 sm. box blackberry or raspberry Jello 1 c. (drained) blackberries, fresh or frozen 1 c. cooking oil 1/2 c. cold milk 1 c. chopped pecans 4 eggs 1 c. coconut Mix ingredients together. Add eggs, 1 at a time. Beat 5 minutes at low speed. Bake at 350 degrees for 30 minutes or until cake comes away from pan. Cool. Frost with blackberry frosting. FROSTING: 1 box powdered sugar 1/2 c. butter 1/2 c. coconut 1/2 c. drained blackberries 1/2 c. chopped pecans Melt butter and cream with powdered sugar. Mix well all other ingredients. Beat well until thick and creamy. Spread on cool cake. |
