GINGER COOKIES 
1 c. sugar
3/4 c. shortening or 1/2 c. butter, 1/4 c. substitute
4 tbsp. sorghum or dark molasses
1 egg
1 tsp. ginger
1 tsp. cinnamon
1/2 tsp. cloves
1 1/2 tsp. baking soda
1 tsp. baking powder
2 c. flour

Cream sugar and shortening. Add molasses and egg. Sift spices, soda, and flour; add to first mixture. Use a teaspoon of dough at a time on well-greased sheet. Flatten with bottom of tumbler which has been dipped in water. Cookies will be thin. Bake at 300 degrees for 15 minutes.
