ADA'S IRISH POTATO CANDY | |
This recipe was handed down to me by my grandmother, Ada Grove Rogers. She often used leftover mashed potatoes to make this candy. 1 potato 4 (1 lb. ea.) boxes confectioners' sugar 1 cup smooth peanut butter Boil potato until done. In large bowl, mash potato with a fork. Gradually add confectioners' sugar, mixing with a fork until mixture becomes thick enough to use your hands. Add confectioners' sugar and knead until this can be rolled out thinly. Use the sugar as you would flour. Once this is rolled thin, spread a coat of peanut butter over it.
