THAT GOOD SALAD | |
3/4 c. vegetable oil 1/4 c. fresh lemon juice 2 garlic cloves, minced 1/2 tsp. salt 1/2 tsp. pepper 2 bunches romaine lettuce (1 lb. each) 2 c. chopped tomatoes 1 c. (4 oz.) shredded Swiss cheese 2/3 c. slivered almonds, toasted 1/2 c. grated parmesan cheese 8 bacon strips, crisp, crumbled 1 c. Caesar salad crouton Combine oil, lemon juice, garlic, salt and pepper; shake well in a covered container. Chill. Toss romaine, tomatoes, Swiss cheese, almonds (if desired), parmesan cheese and bacon. Shake dressing; pour over salad and toss. Add croutons and serve immediately. Yield: 14 servings. |
