MINT BROWNIES 
2 eggs
1 c. sugar
1/2 tsp. vanilla
1/2 c. butter, melted (use 1/2 cup butter if doubled)
1/2 c. flour
1/3 c. cocoa
1/4 tsp. baking powder
1/4 tsp. salt
1/2 c. nuts, chopped (optional)

Beat eggs in small mixer bowl. Gradually add sugar and vanilla; beat well. Blend in melted butter. Combine dry ingredients; gradually add to egg mixture. Blend, spread in greased 8-inch pan. Bake at 350 degrees for 25 to 30 minutes. Cool. Spread on mint frosting. Cover with foil and refrigerate until firm.

MINT FROSTING:

2 tbsp. butter, softened
1/2 to 3/4 tsp. mint extract
2 tbsp. milk
1 1/2 c. powdered sugar

Combine ingredients in order given. Frost on cooled brownies.

CHOCOLATE LAYER:

2 oz. Baker's sweetened chocolate (German's brand)
3 tbsp. butter
1 tsp. vanilla

Melt chocolate and butter on low heat. Stir in vanilla until smooth. Cool slightly (10 to 15 minutes).
