FRESH BASIL AND TOMATO SAUCE 
(Enough sauce for 1 pound of Pasta):

1/2 c. olive oil
1/4 c. extra virgin olive oil
4 to 12 cloves fresh garlic, minced
30 to 40 fresh basil leaves, torn into small pieces
1 (28 oz. or 35 oz.) can of imported plum tomatoes or 8 to 10 fresh plum
tomatoes, chopped

In large saute pan, heat oils and saute garlic for 2 minutes. Add the basil leaves and saute another 2 minutes. Add chopped plum tomatoes, a little salt and pepper and simmer 10 to 15 minutes. Serve over linguini or pasta of choice.
