RAISIN SUGAR COOKIES 
1/2 c. butter
3/4 c. sugar
1 egg
1 tbsp. milk
1 tsp. lemon juice
2 tsp. grated lemon rind
1 1/2 c. sifted flour
1/4 tsp. baking powder
1/4 tsp. salt
2 c. seedless raisins

Mix together thoroughly butter, egg, sugar, milk, lemon juice and rind. Sift together flour, baking powder and salt. Add raisins. Chill dough. With floured hand roll the dough into walnut sized balls. Flatten balls with bottom of glass greased with butter and then dipped in sugar. Bake at 375 degrees for 5 to 7 minutes. Makes 2 1/2 to 3 dozen cookies.
