SPINACH SOUFFLE 
2 (10 oz.) frozen chopped spinach thawed and drained
2 c. cream style cottage cheese
1/2 c. butter, cut in pieces
1 1/2 c. American cheese
3 eggs, beaten
1/4 c. flour
1 tsp. salt

Thoroughly combine all ingredients in mixing bowl. Pour into greased souffle dish or other similar deep baking dish. Bake about 1 hour at 350 degrees or until done and set.

I usually double this amount, because it's great warmed over.

This is really good though mine doesn't rise like a souffle should, for some reason. I added 1/2 tsp. basil and 1/2 tsp. thyme as I was afraid it would be a little bland otherwise. Tastes great.
