SAUSAGE AND PEPPERS 
1 lb. smoked sausage (lg. ring type)
1 med. sized green pepper
1 med. onion
1 lg. can tomato sauce
1 sm. can mushrooms
Olive oil
Noodles or rice

Slice sausage in 1/2 inch pieces and brown. Remove from skillet and drain on paper towels. Pour out fat. Brown chopped pieces of onion and green pepper in small amount of olive oil. When soft add sausage and tomato sauce and the mushrooms. Simmer 10 minutes. Can be served over either rice or noodles.
