BATTER FOR FRYING | |
3 lb. fish fillets 1 pt. dairy buttermilk Lemon slice (if fish is not skinned) 2 pts. oil 2 c. flour 2 c. pancake mix 2 1/2 c. club soda Soak fish in enough buttermilk to cover, refrigerate with 1 slice of lemon (to remove fish and taste or skin fish completely) for 2 hours. Heat 1 1/2 pints oil in a heavy saucepan (at least 2 1/2 quart size). Drain milk from fish. Cut fish in halves forming triangles. Dredge fish in flour and let dry for 5 minutes. Mix pancake mix with enough club soda to the consistency of buttermilk. Dip floured fillets in batter, letting excess drip off. Fry in hot deep fat 4 minutes each side. Drain on paper towels. Arrange in single layer on cookie sheet and keep warm in 250 degree oven until all fish are fried. |
