VEAL SAUSAGE 
1 lb. ground veal
1/4 lb. ground veal fat
1/4 c. minced parsley
3/4 tsp. salt
1/2 c. finely chopped spinach
1 tsp. thyme
1 shallot, minced
1 egg
Fresh ground black pepper to taste

Mix all ingredients together. Chill for 30 minutes. Form into patties. Fry in butter until nicely browned. Do not over-cook this sausage.
