POTATO CAKES 
3 c. mashed potatoes (may use leftovers)
1/2 c. chopped onion
1 tsp. salt
1 pkg. dry yeast, dissolved in 1/2 c. warm water
1/2 c. plain flour
1 tsp. pepper

Mix all dry ingredients thoroughly. Make a well in center of mixture. Add yeast and mix well. Fry on griddle at 350 degrees until well browned. Serve with butter or your favorite sauce or ketchup.
