INDIVIDUAL CHERRY CHEESECAKES 
2 pkgs. (8 oz.) cream cheese
3/4 c. sugar
1 tbsp. lemon juice
12 to 15 vanilla wafers
1 tsp. vanilla
2 eggs
1 can cherry pie filling

Mix all the ingredients except the pie filling, until smooth. Then, in muffin tins, put cupcake papers or foil cupcake liners in tins. Place 1 vanilla wafer in the bottom, filling with creamed mixture and bake 15 minutes at 350 degrees. Cool, then top with cherry pie filling. Makes 12 to 15 individual cheesecakes.
