CRUNCHY VEGETABLE BURRITO
BANDITOS
 
1/2 c. shredded carrots
1/2 c. chopped broccoli
1/2 c. chopped cauliflower
2 green onions, thinly sliced
4 oz. shredded low-fat Cheddar cheese
1/4 c. non-fat Ranch salad dressing
1/2 tsp. chili powder
4 (7 inch) flour tortillas
1 c. torn iceberg lettuce, bite size pieces or alfalfa sprouts

Adults shred, chop and slice beforehand for younger kids.

Combine carrots, broccoli, cauliflower and onions with cheese, dressing and chili powder.

Lay tortillas flat on a plate and spoon about 1/2 cup vegetable mixture and 1/4 cup lettuce or sprouts down the center of each tortilla.

Wrap tortilla around the vegetable mixture. Heat in microwave 20 seconds if desired.

Per serving: 204 cal, 10 g pro, 7 g fat, 22 g carb, 323 mg sod, 20 mg chol.

Since microwave ovens vary in power, you may need to adjust your cooking time.
