DATE NUT BREAD 
1/2 c. dates, cut up
1 1/2 c. boiling water
1 c. sugar
1 egg, beat lightly
2 c. flour
1 tbsp. vegetable oil
1 c. walnuts, chopped
1 tsp. vanilla extract
1 tsp. baking soda

Soak cut up dates in the boiling water for 1/2 hour; stir occasionally.

In separate bowl combine other ingredients and mix. Add the dates and the water they're in to mix. Beat or stir until blended. Bake at 350 degrees for one hour in a loaf pan. Makes 1 loaf. Freezes well.
