PITTSBURGH POTATOES 
1 qt. 1/3 inch potato cubes
1 onion, finely chopped
3 canned pimentos, cut in pieces
2 c. white sauce (below)
1/2 lb. mild cheese (approximately 1 c.)
1/2 tsp. salt

Cook potatoes and onions in salted water, boiling 5 minutes. Add pimentos and cook 7 minutes more. Drain off potato water and save for white sauce. Pour potatoes in buttered baking dish.

WHITE SAUCE:

2 tbsp. butter
1 tbsp. flour
1 c. potato juice
1/4 tsp. salt
A little pepper

Cut cheese in pieces and melt in white sauce; pour over potatoes in baking dish. Bake at 350 degrees for 1/2 hour. WATCH IT SO IT DOESN'T STICK!
