CASHEW BRITTLE | |
In an iron skillet, boil 3/4 cup honey and 1/4 cup water until it forms a soft ball when dropped by spoon in cold water. Add 1 cup raw cashews and continue to boil until golden brown, about 10 to 12 minutes, stirring constantly. Remove from heat and add: 1 tbsp. butter 1/2 tsp. vanilla 1 tsp. baking soda Mix well, then pour onto greased cookie sheet. When cool, break into pieces. Makes about 1 pound. |
