ENCHILADAS
1 lb. hamburger, browned and drained
1 can refried beans with green chilies
4 or 5 cans Old El Paso Mild Enchilada Sauce
2 or 3 cans beef broth
1 onion, chopped
1 pkg. taco seasoning
1 clove garlic
1 pkg. corn tortillas
Shredded cheese, about 1 lb.
1 or 2 fresh tomatoes, cut up

Heat hamburger, refried beans, onion, garlic and taco seasoning. Add some beef broth so mixture is not dry. Heat tortillas, covered with plastic wrap, about 10 at a time, in microwave for about 25 seconds on high power to make them soft enough to roll. Fill tortilla with meat mixture and roll up. Place in large cake pan.

Pour enchilada sauce over tortillas. Sprinkle with cheese, and fresh tomato. Bake in 350 degree oven until they bubble and cheese is melted, about 10 or 15 minutes. Serves a bunch, depending upon how many tortillas you use. Meat mixture will fill about 25 tortillas.

Since microwave ovens vary in power, you may need to adjust your cooking time.
