SIMPLE CARROT CAKE 
1 box yellow cake mix
2 tbsp. cinnamon
3 c. finely shredded carrots
3/4 c. chopped black walnuts

Prepare cake mix as instructions read. Add cinnamon; mix well. Add 1 cup of carrots at a time; mix well. Then add walnuts to mixture. Mix well. Pour into an 9x13 inch pan, well greased and floured, and bake 40 minutes at 325 degrees.

ICING:

1 (8 oz.) pkg. cream cheese
1 box powdered sugar
1 stick butter
2 tsp. vanilla

Combine and beat until smooth.
