FRESH CORN AND CHEESE QUICHE
(MICROWAVE)
 
6 slices bacon
3 ears fresh corn
4 eggs
1 c. Half and Half or evaporated milk
1/2 c. Swiss cheese
2 tbsp. green pepper
1 tsp. salt
1/8 tsp. pepper, white preferred
1 baked 9 inch pastry shell
Paprika
Parsley

Cook bacon on HIGH 5 to 7 minutes or until crisp. Drain and crumble. Cut corn off cob and set aside. Beat eggs in glass bowl. Add milk, cheese, green pepper, salt and pepper. Microwave on 70% power for 3 or 4 minutes or until heated thoroughly. Stir well and add corn and bacon. Pour mixture into the baked pastry shell. Microwave on 70% power for 13 to 17 minutes or until firm around edges. Center should be slightly soft. Let stand 5 minutes. Sprinkle paprika on top and garnish with parsley.

Since microwave ovens vary in power, you may need to adjust your cooking time.
