HAM HOCKS AND GREENS 
2 bunches collard greens
1/2 med. onion
1 tsp. salt
1 tbsp. sugar
1 tbsp. vinegar
2 pinches cayenne pepper
3-4 ham hocks (can be smoked)
Water

Wash greens in cold water. Remove stems and center veins. Place all ingredients into a large kettle with enough water to cover greens and ham hocks. Bring to a boil. Reduce heat and simmer for 2 hours, stirring occasionally.
