SALSA 
1 (28 oz.) can whole tomatoes (reserve 1 c. liquid from can)
1/2 c. onions, diced
1/2 c. fresh tomatoes, diced
1/4 c. green peppers, diced
1/4 c. red peppers, diced
2 tbsp. jalapeno pepper, diced
1/2 tsp. salt
1 tbsp. finely chopped cilantro

Place whole tomatoes in colander over mixing bowl and drain. Reserve liquid. Place drained tomatoes in blender or food processor and chop to a medium consistency. Transfer to mixing bowl. Measure out 1 cup reserved liquid from tomatoes and place in blender or processor bowl.

Add onions, tomatoes, peppers, salt and cilantro and blend until well mixed. Add to tomatoes in bowl. Mix well with wire whip until all ingredients are incorporated. Cover and refrigerate.
