SALMON CROQUETTES 
1 can red salmon
1 c. cracker crumbs
1 med. onion, diced
1 egg, slightly beaten

Remove all bones and mix with cracker crumbs, onions and eggs. Shape into croquettes and fry. Serve with White Sauce.

WHITE SAUCE:

2 tbsp. cornstarch
3 tbsp. butter
1 c. milk
1/4 tsp. salt
1/8 tsp. pepper

Combine cornstarch, butter, milk and stir until smooth. Add salt and pepper and bring to boil over medium heat, stir constantly. Boil for 1 minute and pour over croquettes. Makes 1 cup.
