RAW APPLE CAKE 
2 c. sugar
1 1/2 c. cooking oil
3 eggs
3 c. all-purpose flour
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla extract
2 c. flaked coconut
1 c. dates, chopped
3 c. raw apples, chopped
1 c. pecans, chopped

ICING:

1 tsp. vanilla
1 c. sugar
1 stick butter
1/2 c. buttermilk
1/2 tsp. baking soda

Cream together sugar and cooking oil. Add eggs and beat well. Combine flour, cinnamon, salt and soda. Gradually add to egg mixture. Add vanilla, coconut, dates, apples and nuts. Batter will be thick. Pour batter into a greased and floured 10 inch tube pan. Bake at 325 degrees for 1 1/2 - 2 hours or until done.

Icing: Mix in saucepan and boil 2 minutes. Pour over warm cake until cake absorbs it.
