SUMMER SAUSAGE 
5 lbs. hamburger, not lean
5 tbsp. Morton Tender quick salt
2 1/2 tsp. mustard seed
2 1/2 tsp. garlic salt
2 1/2 tsp. cracked black pepper
1 tsp. hickory salt
1 tsp. liquid smoke

Mix well. Refrigerate in covered bowl. Mix once a day for 3 days. Fourth day, shape into rolls 1 foot long. Bake on cookie sheet at 150 degrees for 4 hours. Turn over and bake another 3 hours.
