CHICKEN CURRY SALAD 
1 c. white rice
2 celery sticks
1 c. mayonnaise
2 c. water
4 boneless chicken breast
4 green onions
curry to taste

Boil chicken breast in 2 cups boiling water until completely done. Remove chicken breast and add uncooked rice in the same pot of water. After rice has cooked, pour into a bowl. Dice cooked chicken breast, celery and green onion into bowl with rice. Add curry powder to taste, then stir in mayonnaise. Refrigerate for about 2 hours or overnight.
