HEN HOUSE ROCK

2 1/2 lb. Rock Cornish game hens
1 box stuffing mix
Sm. bag pre-chopped walnuts
Raisins
Sm. apple
3 tbsp. butter
Rosemary
Salt and pepper

Rinse hens inside and out, pat dry with paper towel. Lightly salt and pepper inside. In sauce pan, prepare 1 cup stuffing mix by following instructions on box. Then mix in 1 1/2 tablespoons chopped walnuts, handful raisins and 1/2 apple (diced). Preheat oven to 350 degrees. Stuff hens with the stuffing, leaving some room for stuffing to expand. Lightly grease baking pan with butter then add hens, breasts side up. In sauce pan, melt 3 tablespoons butter at low heat. Spoon butter on hens and sprinkle lightly with salt, pepper and rosemary. Bake hens for 1 hour 15 minutes. Spoon hens with drippings from baking pans every 15 minutes.
