JAMBALAYA 
3 onions, sliced
1 red or yellow pepper, chopped
1 clove garlic, minced
1/4 c. butter
2 c. sausage
1/2 c. dry white wine
3 1/2 c. canned tomatoes (cajun style)
1/2 tsp. thyme
1/4 tsp. basil
1/4 tsp. paprika
1/4 tsp. Tabasco
1 c. rice, uncooked

Saute onions, red and yellow peppers and garlic in butter for 10 minutes. Add sausage, wine, tomatoes and seasonings; mix well. Bring to a boil. Add rice gradually, stirring constantly. Reduce heat, cover and simmer for 25 minutes.

Shrimp may be used instead of sausage, either way, it's a great dish.
