2 c. cooked instant rice 1/4 c. finely diced drained canned peaches (no sugar added) 1/4 c. drained canned crushed pineapple (no sugar added) 1/2 oz. chopped pecans or walnuts 2 tbsp. dried currants or dark raisins 1/4 c. Weight Watcher's reduced calorie cholesterol free whipped dressing 1 tsp. freshly squeezed lemon juice 1/8 tsp. ground cinnamon In medium mixing bowl, combine rice, peaches, pineapple, nuts and currants or raisins. In small mixing bowl, combine remaining ingredients, stirring to blend; add to rice mixture and stir to coat. Makes 4 servings. |
