SUMMER SQUASH CASSEROLE 
3 or 4 c. barely cooked zucchini or other summer squash
1 can cream of chicken soup
1 grated carrot
1/2 pt. sour cream
1 sm. chopped onion
2 tbsp. Cheese Whiz or Velveeta cheese
1/2 stick butter
1 pkg. dressing mix (Stove Top)

Mix soup and sour cream with vegetables. Melt butter and cheese and pour over dressing mix, reserving 1 cup for top. Arrange squash, carrot and onion in 8 x 12 inch baking dish and pour dressing mixture over top. Sprinkle remaining dressing cubes over top. Bake 30 to 45 minutes at 350 degrees.

NOTE: May be mixed and frozen, then defrosted before baking.
