MARY'S BEST TOMATO SAUCE | |
1 (1 lb.) pkg. Italian sausage (mild or hot) 1 red onion, chopped 1 red pepper, chopped 2 cloves garlic, minced 1 (15 oz.) can diced tomatoes 1 (15 oz.) can stewed tomatoes 2 tbsp. olive oil salt and pepper, to taste Take sausage out of casing (or use bulk sausage) and cook until all brown (break up sausage with spoon so it becomes little bite-size pieces). Cook red onion and red pepper until soft in olive oil. Add minced garlic and cook until soft (about 3 minutes). In a large pot add both cans of tomatoes and put onto medium heat. Keep stove on medium until the tomato sauce is warm. Add the cooked sausage, onion, pepper and garlic mixture. Season with salt and pepper, to taste.
