FRIDAY'S POTATO SKINS 
5 lg. potatoes
4 oz. shredded Colby cheese
2 oz. sour cream with chives

FRIDAY'S MIX:

2 1/2 oz. butter
2 1/2 oz. yellow onions, sliced 3/8 inch thick
2 1/2 oz. bell peppers, sliced 3/8 inch thick
2 1/2 oz. ham, sliced 1/4 inch thick

Cook potatoes in 450 degree oven until they are slightly firmer than baked potatoes. Meanwhile, make Friday's Mix by melting butter in a large saute pan over medium heat. Add onions and saute until onions are almost limp. Add ham and peppers. Continue to saute until onions are limp. DO NOT BROWN!

When potatoes are baked, slice in half lengthwise. Using a tablespoon, scoop out middle of potato leaving 1/2 inch of potato attached to skin.

Evenly distribute Friday's Mix into each skin (1 tablespoon per skin). Sprinkle cheese evenly over potato skins. Melt. Serve with sour cream.
