SAVOURY RICE 
2 leeks, chopped
1/2 to 1/4 c. cooking oil
1 tbsp. green chiles (seeds removed), optional
2 tbsp. shredded onions
4 lg. eggs
Salt and pepper to taste
2 c. cooked rice

Fry the leeks in the oil for about 5 minutes, then add the chiles and onions and fry until cooked but not brown. Beat the eggs in a bowl with the salt and pepper and pour into same pan. Fry all together, "scrambling" the eggs into rather coarse pieces by mixing round and round with a spoon.

Add the cooked rice, a big spoonful at a time, mixing well with each addition. Pile on a hot dish and serve.

NOTE: This is a very tasty way of serving rice with meat or chicken curry, although it is quite good by itself.
