BREAKFAST CASSEROLE 
1/2 + loaf bread
8 eggs
1 1/2-2 c. milk
2-3 tsp. mustard
1 lb. sausage, browned & crumbled (can use ham or bacon)
3 c. shredded Cheddar cheese
1/2 pkg. (bag) frozen tater tots
Optional: Mushrooms, onions & green pepper

Place a single layer of bread slices in bottom of greased 9 x 13 inch pan. Tear remaining bread into pieces and put on top of the bottom layer. Sprinkle on sausage, optional ingredients and cheese. (I used 1 large onion and 1 green pepper sauteed in butter.)

Beat eggs by hand. Add mustard and milk; beat well. Pour egg mixture over casserole. Arrange tater tots on top. Cover with aluminum foil. (Can be refrigerated overnight.) Bake at 350 degrees for 40 minutes covered and 15-20 minutes uncovered.
