SANTE FE TURKEY FAJITAS | |
2 c. turkey strips 1/4 c. olive oil 1 red pepper, sliced in 1/4 inch strips 1 green pepper, sliced in 1/4 inch strips 1 med. onion, thinly sliced 1 clove garlic, minced 1 tsp. pepper 1/2 tsp. cumin 1/4 tsp. cayenne pepper 1/4 c. lime juice 1/2 c. chopped fresh cilantro or parsley Flour tortillas Salsa Sour cream Guacamole In a 10 inch skillet, over medium heat, add olive oil, raw turkey, peppers, onion and garlic. Season with remaining ingredients. Cook stirring occasionally until turkey is no longer pink (8 to 10 minutes). Serve with warm tortillas, salsa, sour cream and guacamole. Serves 4 to 6. |
