MAMA'S FROZEN LEMON PIE 
1 box vanilla wafers, made into fine crumbs
3 eggs, separated
1/2 c. sugar
5 tbsp. lemon juice
1/2 pt. whipping cream, beaten stiffly

Butter freezing tray and sprinkle bottom and sides with vanilla wafer crumbs. Beat egg whites until stiff. Beat in sugar and add egg yolks, 1 at a time, and beat well. Stir in lemon juice. Fold in stiffly beaten whipped cream. Pour into tray and sprinkle top with more vanilla wafer crumbs. Freeze.

When ready to serve, cut into slices. Garnish with mint leaves and/or thin lemon slices, if desired.

Note: A loaf pan works very well for this.
