FAJITA 
1 lb. boneless, skinless chicken breasts or use flank steak or boneless sirloin
2 tbsp. lemon juice
2 tbsp. lime juice
1 clove garlic, crushed
2 tsp. oil
1/4 tsp. dried oregano
1 lg. onion, sliced and sauteed
1 green pepper, sliced and sauteed
8 flour tortillas, warmed

Mariande: Mix lemon and lime juices with oil, oregano and garlic. Spread on each side of meat. Cover and refrigerate overnight. Turn once.

Grill meat then slice diagonally into 1/4 inch strips or cut into strips and stir fry.

To serve: Place meat, sauteed onions and peppers on a platter. In small separate bowls place shredded Cheddar cheese, shredded lettuce, chopped tomato, salsa, sour cream or yogurt.

Prepare: Each person prepares their own: place meat in center of a warm tortilla. Add onions, green peppers, and any or all of the condiments - tomato, salsa, cheese, lettuce and sour cream. Fold sides of tortilla to the center then fold bottom to center to form a pocket. Eat and enjoy. Serves 4.
